How to screen baristas

Specialty cafés and coffee chains in Dubai, Abu Dhabi, Riyadh and beyond hire baristas continually, and the role is broader than it looks: drink quality, speed at the bar, hygiene, cash handling and being the friendly face regulars come back for. Latte art can be taught. Consistency, cleanliness and a calm manner at the morning rush are harder to train, so those are what the first round should surface.

The bar

What good looks like

A good barista cares about consistency. They follow the recipe and dial-in routine, notice when a shot tastes wrong and fix it rather than serving it. They keep the bar clean as they go and understand why milk, grinders and surfaces need regular attention.

They also manage a queue gracefully. In a busy café the barista is often taking orders, making drinks and chatting to regulars at once. Strong candidates describe how they stay organised, communicate with the till and keep a friendly tone when the queue is out of the door.

Ask

Structured interview questions

  1. 01

Your espresso is pulling much faster than usual during the morning rush. What do you do?

A strong answer: Recognises a grind or dose issue, adjusts and tastes, tells colleagues, and does not keep serving under-extracted shots.

  2. 02

There are eight drinks on the ticket rail and a regular wants to chat. How do you handle it?

A strong answer: Greets the regular warmly while continuing to work, keeps the conversation brief and catches up when the queue eases.

  3. 03

Talk me through your cleaning routine at the end of a shift.

A strong answer: Mentions backflushing, cleaning steam wands and grinders, surfaces, fridge checks and logging, in a sensible order.

  4. 04

A customer says their drink tastes burnt and asks for a new one. What do you do?

A strong answer: Apologises, remakes it without argument and checks whether there is an equipment or milk-temperature issue.

  5. 05

How would you explain the difference between a flat white and a latte to a new customer?

A strong answer: Gives a simple, accurate explanation focused on taste and texture rather than jargon.

  6. 06

You notice a colleague not following a hygiene step. What would you do?

A strong answer: Mentions it to the colleague politely and raises it with the supervisor if it continues.

Probe

Red flags to probe with a person

These are prompts for a follow-up conversation, not automatic reasons to reject. Context matters, and a reviewer should hear the candidate out.

  • Willing to serve a drink they know is below standard to keep the queue moving.
  • Vague or careless about cleaning milk equipment.
  • Describes customers as an interruption to making drinks.
  • Cannot commit to early-morning or weekend shifts the café needs.

With Voxxhire

Running the first round with Voxxhire

  1. 01

    Configure the role

Set the role criteria, competencies and job-specific interview prompts in an interview template, and agree the scoring guidance with the hiring manager.

  2. 02

    Invite candidates

Send the interview invitation by email from the hiring pipeline, or attach the template to a job so applicants are invited after they apply.

  3. 03

    Candidate completes a voice interview

After a notice and consent step and a quick microphone check, the candidate answers your questions in a spoken interview in English or Arabic, at a time that suits them.

  4. 04

    Recruiter reviews the evidence

Your reviewer reads the transcript and an evidence-backed scorecard that quotes the answer behind each competency score. Any AI recommendation is advisory and marked for human review.

  5. 05

    A person decides

Your recruiter or hiring manager decides who moves forward to the next stage. Voxxhire does not hire or reject anyone automatically.

Setting it up for baristas

Write prompts around your own menu and equipment, and keep the question set tight so candidates can finish quickly. Weight hygiene and consistency at least as heavily as coffee knowledge; many good baristas start with little specialty experience. Store managers should agree in advance what a strong answer about the morning rush sounds like. Invite shortlisted candidates to a bar trial, which remains the best test of hands-on skill.

Boundaries

What Voxxhire does not do

Voxxhire runs and documents the structured interview stage. It does not verify visas, licences, certificates or right-to-work status, and it never hires or rejects a candidate automatically. For baristas, your team still owns:

  • A practical bar trial to assess drink preparation.
  • Health and food-handling cards your municipality requires.
  • Visa, residency and right-to-work status.
  • References from previous cafés or food outlets.

FAQ

Frequently asked

Can a voice interview assess coffee-making skill?

Not directly. It assesses how a candidate thinks about consistency, hygiene and service. Hands-on skill is best judged in a bar trial.

Should we hire baristas without specialty coffee experience?

Often, yes. Many cafés train recipes and equipment. The first round can help identify people with the habits that are harder to teach.

Can multiple branches share one interview?

Yes, if the role is the same. Shared templates help keep standards consistent across sites while each store manager reviews their own candidates.
